Virtual Wellness Nutrition Series: Superhero Muffins

This is the final recipe in our virtual wellness nutrition series. Thank you for joining us as we shared videos of recipes that are easy to make and full of healthy ingredients. Our Director of Student Success, Mrs. Courtney Marchetti, and her children Lila and Ollie show us how to make superhero muffins.

Superhero muffins

Ingredients:

2 cups almond meal
1 cup rolled oats
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts 
½ cup raisins, chopped dates, or chocolate chips
3 eggs beaten (or 6-9 tbs aquafaba -- liquid from canned garbanzo beans/chickpeas)
1 cup grated zucchini (about 1 zucchini)
1 cup grated carrots (about 2 carrots)
6 tablespoons unsalted butter, melted
½ cup maple syrup
1 teaspoon vanilla extract

Directions:

  • Position a rack in the center of the oven. Preheat the oven to 350°F. Line a 12-cup standard muffin tin with paper muffins cups.
  • In a large bowl combine the almond meal, oats, cinnamon, nutmeg, baking soda, salt, and walnuts, raisins, dates, or chocolate chips.
  • In a separate bowl, whisk together the eggs, zucchini, carrots, butter, maple syrup, and vanilla. Add to the dry ingredients, mixing until just combined. The batter will be thick. 
  • Spoon the batter into the muffin cups, filling each to the brim. Bake until the muffins are nicely browned on top and a toothpick inserted in the center of the muffin comes out clean, 25 to 35 minutes.

Fun Facts:

  • These muffins are packed full of veggies and other whole-food nutrient-dense ingredients.
  • The almond meal and whole-grain oats replace nutrient-stripped white flour typically found in muffins.
  • These will freeze really well -- just defrost on low power in the microwave.
  • They make a great nutritious snack that will both satisfy your sweet tooth and provide you with much-needed energy. It also makes for a satisfying and quick on-the-go breakfast!
